Why an SOP isn't training

An SOP is a reference — it tells someone who already knows the job what the steps are. A new hire reading it for the first time doesn't know which steps matter, where people slip up, or how you'll know they've got it. So they read it, nod, and you find out three weeks later they never really learned it.
